Instructions
  • 1 Collect fruit, cut into halves and remove stone
  • 2 Set up smoker and smoke peach halfs until you are happy with the smoke on the outside
  • 3 Blend in the theermix with 1ml pectinex
  • 4 Measure the liquid into 2 centrifuge buckets and spin at 4000 rpm for 20 mins
  • 5 Pour off mixture and measure the juice in ml
  • 6 Add vodka equally with the peach juice
  • 7 Add sugar to vodka and peach juice 10g per 100ml and stir until dissolved
