Collect fruit, cut into halves and remove stone

Set up smoker and smoke peach halfs until you are happy with the smoke on the outside

Blend in the theermix with 1ml pectinex
4
Measure the liquid into 2 centrifuge buckets and spin at 4000 rpm for 20 mins
5
Pour off mixture and measure the juice in ml
6
Add vodka equally with the peach juice
7
Add sugar to vodka and peach juice 10g per 100ml and stir until dissolved
