Instructions

1 Collect fruit, cut into halves and remove stone
2 Set up smoker and smoke peach halfs until you are happy with the smoke on the outside
3 Blend in the theermix with 1ml pectinex
4 Measure the liquid into 2 centrifuge buckets and spin at 4000 rpm for 20 mins
5 Pour off mixture and measure the juice in ml
6 Add vodka equally with the peach juice
7 Add sugar to vodka and peach juice 10g per 100ml and stir until dissolved
