  • 1 Blend mango with pectinex in thermomix
  • 2 Spin in centrifuge on max for min 30mins
  • 3 Strain clarified juice
  • 4 Add sugar in 1:1 ratio by weight
  • 5 Add salt by weight at 0.5%
