  • 75g Caster Sugar
  • 1500ml Whole Milk
  • 150ml Double Cream
  • 1/2g Vanilla Pod
  • Pinchg Salt
  • 1g Whole Nutmeg

Instructions
  • 1 Melt the butter over a medium heat. add the rice and stir. add the sugar, stirring until dissolved.
  • 2 Stir until the rice swells and becomes sticky.
  • 3 Add milk and stir until no lumps remain.
  • 4 Add the cream and vanilla and bring the mixture to a simmer.
  • 5 Once this is reached, give the mixture a final stir and grate at least a third of a nutmeg over the surface.
  • 6 Once cooled spin in centrifuge and collect clarified liquid
  • 7 Mix liquid with sugar and vodka
  • 8 Bottle and refrigerate
