1000g Sugar - Caster
2g Pectinex SPL Ultra

Instructions

1 Blend in batches with water in thermomix along with 2.5ml pectinase for 5 minutes at speed 7
2 Pour liquid into large jug
3 Take 4 large centrifuge bucket and measure the liquid to distribute evenly
4 Spin at 4000rpm for twenty minutes
5 Pour off clarified juice and strain through muslin
6 Add liquid to thermomix along with 1:1 sugar
7 Blend at speed 3 at room temperature until the sugar has dissolved
8 Strain and bottle
